Question 7:  Do I need to use handshake lines to control the data direction?

Answer:  This is not necessary.  The converters come with the Auto-Turn-Around feature, the converter transceiver circuit will change the data direction automatically upon sensing a "start bit" (a logic high "Mark" to low "Space" transition) from its RS232 data transmit line (TxD).
